Skimming the fat can be a major pain... Especially since I always end up scooping quite a lot of broth along with the fat. Store it in the refrigerator UPSIDE DOWN. The fat will solidify, but when you open the jar, the gelled meat drippings will be on TOP. You can just scoop out the stock with a spoon. *slap*
