Maybe too simply stated. Please define simplest stable form. What are the parameters that describe "simplest stable form"?

Can a compound of iron and oxygen be the "simplest stable form"? How about ethanol or sugar...are they "simplest stable forms"? Amino acids? Proteins? Lipids? RNA? DNA? Are they in their simplest stable form?

What is it about the "settling" of matter into its "simplest stable form" that prevents DNA from changing within populations of organisms?
