The colelsaw, fresh made by you, is really really good for you. Just buy a head of green cabbage a medium size firm head or maybe you grow your own...
Quarter and shred the cabbage with one of those metal cabbage shredder things...
shred one or two carrots fine...
shred some onion (to taste) into there, shred the onion fine...
add salt, about 2-3 teaspoons, mix it all together, and let it just sit for an hour on the counter...
then add about a tablespoon of vinegar, a bit of pepper, mix... and voila coleslaw, real easy. You can add a little bit of sourcream too, not much just a little, I like it it better with a bit of sour cream (or yogurt), some people add a teaspoon of sugar... some people add celery seed.. depend on what you like for flavors.
everything to taste, real easy.
the most important part is letting it sit for an hour in the salt to bring the juices out.
You can eat some right away, put the rest in the fridge it'll be even better tomorrow.
Raw cabbage is loaded with vitamin C and vitamin K. Unties your tummy in a heartbeat!

and then of course there is my sauerkraut... mmm...
