Hi skieslimit & Sunflower.

I think we are on the same wavelength Sunflower <img src="/ubbthreads/images/graemlins/cool.gif" alt="" /> I bought 6 x 500g bags of pumpkin seeds yesterday to replace the almond nut butter I can no longer eat. Half price at my health food shop. Stocked up big style now.

I soak my pumpkin seeds over night in salted water. Then bake at low heat 60deg’s for 12-24 hours. This partially sprouts them and activates enzymes and makes them easier to digest. They also taste excellent; they go all crispy and crunchy.

I add these to all my salads. I will also make the next batch of the above cookies with them and I will also try to make a nut butter with them too.
