I have a copy of a study from USF that shows numerous vegetables tested, both organic and non.
The organic veggies had—if I remember correctly—10 to 100 times (not percent, times) the mineral content than their identical non-organic counterparts. I may have to dig up the results and post them here.
It's becoming well-known that many/most pesticides inhibit mineral absorption in plants.
I spoke to a farmer in Montana several years ago and they constantly have issues with pests, even using pesticides. The farmer's wife convinced him to set aside a small piece of land and to skip spraying that part. They discovered that they had virtually no pest issues on that piece of land and they yielded significantly more from that piece than any other piece of land.
Agriculture Magazine printed an article that exposed the real cause of mad cow disease—pesticides. Pesticides interfere with copper metabolism in the brain (if I remember correctly) and caused the animals to have the "disease".
Unfortunately, ADM produces most of the U.S. food supply; yes, that same company that makes incessant donations to PBS.
