I use Emeril's stainless steel, however, I've heard that stainless steel can have nickel in it, and possibly other impurities.
I'd love to know what's the best surface to use too.

How is glass or ceramic cookware? Is there any particular reason glass cookware has been taken off the market?

Seems to me that Le Creuset-type pots would be safest to cook in.

I've heard that glass is one of the safest. Perhaps that's why it's off the market <img src="/ubbthreads/images/graemlins/smile.gif" alt="" />

lol! yeah, I was thinking the same thing, Russ! But Im' sure the BigWigs in control of the "masses" all made sure THEY have the very best special made glass ware for their servants to use for THEM.
For the rest of us--- check your local flea markets and Salvation Army- there may be some old Arcorac or Pyrex glass cookware laying around for us to scavange. In the early 1980's, I know they used to make clear brown pyrex cookware for the oven or stovetop.

I remember Pyrex. We used to use it all the time growing up.

I do not work for this company at all. I do not profit from any of their sales at all. Just an FYI that you can purchase cornings vision cooking and baking ware's at the following online store. The visions line is glass and see thru. http://www.vermontcountrystore.comYou can purchase directly from this store, or through amazon.com site. FYI, if you purchase from amazon and the purchase is over $25 then you get free shipping. There are also resaler's on ebay. Do a search for visions corning and you'll find some, if not, check back again. Also, pyrex still makes a wide line of bowls, measuring cups and casserole dishes, and loaf pans. There are also iron frypans/skillets and dutch ovens. Ceramic can contain lead in the glaze or the clay, can't it? I can't remember and would need to re-research it again to be sure. If someone else knows for sure, jump in and answer.

I recently started cooking in glass and using glass mixing bowls, and drinking from glass. As we did when we were kids. Let me tell ya, everything tastes different. Better tasting. Must be something to the nickel and stainless steel pans. I have read this in more than one place too.

I remember Pyrex. We used to use it all the time growing up. What is in pyrex? Stainless steel also contains tin. Is titanium cookware safe?

Pyrex is a heat-resistant glass that was commonly used in cooking in the 80s.

No tintanium is NOT safe! Titanium gets distributed in ones lungs as tiny micro fragments of metall dust.
Same things with false teeth with titanium screws in the jaw!
Titanium may even be worse than mercury as far as asthma and such are concerned.
